Well well, it’s that time of the year and recipes for Christmas dinner or treats in the form of cakes, puddings or starters are on everyone’s lips. For those people who regularly enjoy fish but who didn’t budget for something as extravagant as crayfish, we have a recipe for a wonderful mock crayfish starter which is easy on the wallet and easy to make. Our host this week is Lesego Sedumedi of the Rustenburg Cooking Academy. During the past number of weeks you might have noticed students of the Rustenburg Cooking Academy featuring in our “What’s Cooking?” articles. If you or your children are interested in a career in the dining or accommodation industry, don’t hesitate to give the Rustenburg Cooking Academy a call on 071 214 3557 or email This email address is being protected from spambots. Ingredients:

1 onion;
1.5 kg white skinned fish or fresh salmon
A few drops of Tobasco sauce
Salt & pepper to taste
120 ml Mayonnaise
1 lettuce head
75 ml tomato sauce

Method:

Cook the fish with an onion and salt and pepper (about 10 to 15 minutes) drain and allow to cool. Flake the fish.
Mix the other ingredients together to make a “Thousand Island” sauce and cover the fish.
Serve in individual bowls on top of shredded lettuce or create a “pita” shape with lettuce and fill each individually. Serve and enjoy!
This is an easy starter which will fit your budget and allow you more than enough time to catch up on “our time” since last Christmas.
