AGRI-PULSE - VRYBURG - Pancakes are a family favourite generally enjoyed on rainy days - days of which a large part of the country have recently experienced.
Pancakes are so versatile and can be enjoyed on sunny, windy and dry summer, autumn or winter days.
Sanet Spencer shared this easy, yet delicious dish of pancakes with a haddock filling, that can be enjoyed with a garden salad, fries, baked potato or a side dish of your choice.
Ingredients
450 gram smoked haddock
500ml milk
1 packet cream of chicken soup powder
80 ml corn flour (Maizena)
500ml grated cheddar cheese
12 to 14 pancakes
500ml white sauce (with cheese).
Instructions
1. Place haddock pieces in a microwavable bowl.
2. Add 250ml of milk to the fish (haddock) and microwave on high for 8 to 10 min.
3. Flake the fish and add the remaining milk.
4. Microwave the fish and milk mixture until boiling point.
5. Mix corn flour and cream of chicken soup powder with a little water to form a paste.
6. Add corn flour mixture to fish mixture and microwave to a thick substance. Stir every 2 minutes.
7. Add grated cheese to mixture and stir thoroughly.
8. Fill pancakes with mixture, roll pancakes and place in greased oven dish.
9. Cover filled pancakes in dish with white sauce.
10. Add some grated cheese over sauce.
11. Bake in oven at 180°C for 30min, until cheese is melted.
12. Serve with a fresh garden salad or any side of your choice.
