Prince Nkosi is an experienced chef who likes turning traditional food into a fine dining experience. He grew up in Soweto where he used to help his mom in the kitchen. Today, his mom is still his biggest fan and he loves cooking for her.

BRAISED LAMB SHANK

Ingredients:
• Shank (1 per person)
• Salt and pepper
• Crushed garlic
• Crushed ginger
• Diced carrots
• Chopped celery
• Chopped onion
• Paprika
• Herbs of your choice
Method:
• Gather the ingredients.
• Pre-heat oil in a pot.
• When the oil is hot, add the onions, carrots, celery, garlic and ginger.
• Sautee for 3 minutes.
• Add the shanks. Fry together until the shanks are brown in colour.
• Then add the salt, pepper, paprika and herbs of your choice and braise for 2 and a half hours in a slow oven.
• Serve with samp, mash or rice.
