Elizabeth Ntaopane is a cook at an old age home in Klerksdorp. Sago pudding is her favourite dessert and also a favourite on the menu for the residents at the old age home. It is the perfect way to end of Sunday lunch on a sweet note.

SAGO PUDDING

Ingredients:
• 500 g sago
• 2 l milk
• 125 g margarine
• 4 eggs, beaten
• 250 ml sugar
• 5 ml salt
• 125 ml apricot jam, to spread on top
Method:
• Mix margarine, sugar and milk in pot on stove, stir frequently.
• When milk mix comes to a boil, add sago.
• Boil for 10 minutes over medium heat, stirring frequently until it thickens.
• Add egg into mix and remove from heat.
• Pour mixture in ovenproof dish.
• Bake in oven at 180°C for 15-20 minutes.
• Spread apricot jam as a topping over baked pudding.
• Serve with warm custard.
