For the past four to five weeks Rustenburg Herald has been a regular guest in the kitchens of the Rustenburg Rotary Club and no, this doesn't mean we've been going around in circles! On the contrary, we have enjoyed some excellent dishes from different parts of the world... Rotary is indeed an international organisation...
Our latest excursion has been to the house of Amanda and Mike Agathagelou where we've met our hosts and also Ronnie and Jenny Schild, Mike and Wilma Lig and Club President Johan Krugel who unfortunately got held up but was represented by his wife - Angela. Everyone in Rustenburg knows Ronnie Schild - right? Well, perhaps not everyone - but did you also know that Ronnie is absolutely crazy about trout fishing? So therefore Ronnie appropriately prepares smoked trout which is complimented by Wilma and Mike Lig's Yorkshire "Pudding" which is in fact a dish rather than a pudding. For those who love fish but who have never tasted trout - well, it's absolutely divine... Here's how you go about...

Ronnie's German Smoked Trout 

First - catch some trout - (isn't this obvious? Yes it is - but no mean feat either...)

For the rest of the recipe you do the following: (You need a stainless steel smoker and a gas cooker)

Ingredients:
2 whole trout – gutted
Salt & Pepper
Lemons,
Lemon Butter Or Tartar Sauce

Method:
Sprinkle fish with salt on the inside & outside. Place the trout in the smoker after you filled it with smoker wood chips. Put smoker on medium heat on top a gas flame for approximately 2 hours.

To serve:
Debone the smoked cooked trout.
Serve with lemon wedges, lemon butter or tartar sauce.
Best served with cooked rice.
